Italian Minestrone Soup is a hearty and nourishing comfort soup filled with beans, pasta, and vegetables, perfect for a cozy meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 cup small pasta (such as ditalini)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until onion is translucent.
  2. Add carrots and celery, and cook for about 5 minutes until they begin to soften.
  3. Stir in zucchini, diced tomatoes, and vegetable broth. Bring to a boil.
  4. Add cannellini beans, pasta, oregano, and basil. Reduce heat and simmer for 15-20 minutes, or until pasta is cooked.
  5. Season with salt and pepper to taste. Serve hot, topped with grated Parmesan cheese if desired.

  • Feel free to add other vegetables like spinach or kale for extra nutrition.
