Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 cup small pasta (such as ditalini)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until onion is translucent.
- Add carrots and celery, and cook for about 5 minutes until they begin to soften.
- Stir in zucchini, diced tomatoes, and vegetable broth. Bring to a boil.
- Add cannellini beans, pasta, oregano, and basil. Reduce heat and simmer for 15-20 minutes, or until pasta is cooked.
- Season with salt and pepper to taste. Serve hot, topped with grated Parmesan cheese if desired.
Notes
- Feel free to add other vegetables like spinach or kale for extra nutrition.
- For a gluten-free version, use gluten-free pasta.
