Italian Baked Stuffed Peppers are a delicious Mediterranean comfort food, perfect for a hearty meal.

- 4 large bell peppers
- 1 cup cooked rice
- 1 cup mozzarella cheese, shredded
- 1/2 cup tomato sauce
- 1/2 pound ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
- Add ground beef to the skillet, cook until browned. Drain excess fat.
- Stir in cooked rice, tomato sauce, Italian seasoning, salt, and pepper. Mix well.
- Stuff each bell pepper with the beef and rice mixture.
- Place stuffed peppers in a baking dish and cover with foil.
- Bake in the preheated oven for 30 minutes.
- Remove foil, sprinkle mozzarella cheese on top of each pepper.
- Bake for an additional 10 minutes, or until cheese is melted and bubbly.
- Serve hot and enjoy!
Notes
- You can substitute ground beef with ground turkey for a lighter option.
- Feel free to add other vegetables like zucchini or mushrooms to the stuffing mixture.
