Ingredients

  • 2 zucchinis, sliced
  • 1 cup mushrooms, halved
  • 2 bell peppers, cut into chunks
  • 1 red onion, cut into chunks
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano


Instructions

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine olive oil, salt, black pepper, garlic powder, and dried oregano.
  3. Add the zucchini, mushrooms, bell peppers, and red onion to the bowl and toss to coat evenly.
  4. Thread the vegetables onto skewers, alternating between different types for a colorful presentation.
