Ingredients
- 2 zucchinis, sliced
- 1 cup mushrooms, halved
- 2 bell peppers, cut into chunks
- 1 red onion, cut into chunks
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
Instructions
- Preheat the grill to medium-high heat.
- In a large bowl, combine olive oil, salt, black pepper, garlic powder, and dried oregano.
- Add the zucchini, mushrooms, bell peppers, and red onion to the bowl and toss to coat evenly.
- Thread the vegetables onto skewers, alternating between different types for a colorful presentation.
- Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- Remove from the grill and serve immediately.
Notes
- Soak wooden skewers in water for 30 minutes before using to prevent burning.
- Feel free to add other vegetables like cherry tomatoes or eggplant.
