Description
Greek Zucchini Fritters, known as Kolokithokeftedes, are a delightful appetizer with a crispy exterior and a soft, flavorful interior. They are infused with fresh mint and tangy feta cheese, making them a perfect start to any meal.
Ingredients
- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh mint, chopped
- 1/2 cup all-purpose flour
- 1 egg, beaten
- 1/4 teaspoon black pepper
- Olive oil for frying
Instructions
- Grate the zucchinis and place them in a colander. Sprinkle with salt and let them sit for 10 minutes to release excess moisture.
- After 10 minutes, squeeze out as much liquid as possible from the zucchinis.
- In a large bowl, combine the grated zucchini, feta cheese, mint, flour, beaten egg, and black pepper. Mix well until all ingredients are combined.
- Heat olive oil in a frying pan over medium heat.
- Scoop tablespoons of the zucchini mixture into the hot oil, flattening them slightly with the back of the spoon.
- Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove from the pan and drain on paper towels to remove excess oil.
- Serve warm with a side of yogurt or tzatziki sauce.
Notes
- Ensure to squeeze out as much moisture as possible from the zucchini to achieve a crispy texture.
- These fritters can be made ahead of time and reheated in the oven before serving.
