A refreshing and protein-packed Greek Tomato Cucumber Quinoa Salad, perfect for a delightful lunch.


Ingredients

Scale
  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • 1/2 cup feta cheese, crumbled (optional)


Instructions

  1. Rinse the quinoa under cold water.
  2. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the water is absorbed.
  3. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and let it cool.
  4. In a large bowl, combine the cherry tomatoes, cucumber, red onion, and parsley.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  6. Add the cooled quinoa to the vegetable mixture and pour the dressing over the top. Toss to combine.
  7. If using, gently fold in the feta cheese.
  8. Serve immediately or refrigerate for later.
