Description

Greek Lentil Soup, also known as Fakes, is a protein-rich and warming dish perfect for the winter season.


Ingredients

  • 1 cup lentils
  • 1 onion, chopped
  • 1 carrot, diced
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon dried oregano
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 6 cups water or vegetable broth
  • 2 tablespoons red wine vinegar


Instructions

  1. Rinse the lentils under cold water and drain.
  2. In a large pot, heat olive oil over medium heat. Add the chopped onion and carrot, and sauté until the onion is translucent.
  3. Add the minced garlic and cook for another minute.
  4. Add the lentils, bay leaf, oregano, and water or vegetable broth to the pot. Bring to a boil.
  5. Reduce the heat to low and let it simmer for about 30-40 minutes, or until the lentils are tender.
  6. Remove the bay leaf and season with salt and pepper to taste.
  7. Stir in the red wine vinegar before serving.

Notes

  • For a thicker soup, blend a portion of the soup and return it to the pot.
  • Adjust the seasoning according to your taste preference.
