Greek Chickpea Stew, also known as Revithada, is a simple, rustic, and filling dish that embodies the essence of comfort food. This traditional Greek stew is made with chickpeas, lemon, and olive oil, offering a hearty and satisfying meal.


Ingredients

  • 500g dried chickpeas
  • 1/4 cup olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • Juice of 2 lemons
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Water, as needed


Instructions

  1. Soak the chickpeas overnight in plenty of water.
  2. Drain and rinse the chickpeas.
  3. In a large pot, heat the olive oil over medium heat.
  4. Add the chopped onion and garlic, sauté until soft.
  5. Add the chickpeas, lemon juice, oregano, bay leaf, salt, and pepper.
  6. Cover with water and bring to a boil.
  7. Reduce heat to low, cover, and simmer for 2-3 hours until the chickpeas are tender.
  8. Adjust seasoning with more salt, pepper, or lemon juice as needed.
  9. Serve hot with a drizzle of olive oil on top.

Notes

  • For a thicker stew, mash some of the chickpeas with a spoon.
  • Serve with crusty bread for a complete meal.
