Greek Chickpea Stew, also known as Revithada, is a simple, rustic, and filling dish that embodies the essence of comfort food. This traditional Greek stew is made with chickpeas, lemon, and olive oil, offering a hearty and satisfying meal.
Ingredients
- 500g dried chickpeas
- 1/4 cup olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- Juice of 2 lemons
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 bay leaf
- Water, as needed
Instructions
- Soak the chickpeas overnight in plenty of water.
- Drain and rinse the chickpeas.
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, sauté until soft.
- Add the chickpeas, lemon juice, oregano, bay leaf, salt, and pepper.
- Cover with water and bring to a boil.
- Reduce heat to low, cover, and simmer for 2-3 hours until the chickpeas are tender.
- Adjust seasoning with more salt, pepper, or lemon juice as needed.
- Serve hot with a drizzle of olive oil on top.
Notes
- For a thicker stew, mash some of the chickpeas with a spoon.
- Serve with crusty bread for a complete meal.
