Ingredients

  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh parsley, chopped


Instructions

  1. Cook the orzo pasta according to package instructions. Drain and set aside.
  2. In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and cook for another minute.
  4. Stir in the chickpeas and vegetable broth. Bring to a simmer.
  5. Add the cooked orzo to the pot and stir well.
  6. Pour in the lemon juice and season with salt and pepper to taste.
  7. Simmer for 5-10 minutes to allow the flavors to meld together.
  8. Serve hot, garnished with fresh parsley.
