Ingredients
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can chickpeas, drained and rinsed
- 4 cups vegetable broth
- 1 lemon, juiced
- Salt and pepper to taste
- Fresh parsley, chopped
Instructions
- Cook the orzo pasta according to package instructions. Drain and set aside.
- In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and cook for another minute.
- Stir in the chickpeas and vegetable broth. Bring to a simmer.
- Add the cooked orzo to the pot and stir well.
- Pour in the lemon juice and season with salt and pepper to taste.
- Simmer for 5-10 minutes to allow the flavors to meld together.
- Serve hot, garnished with fresh parsley.

- For a creamier texture, you can blend a portion of the soup before adding the orzo.
