Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh herbs (such as parsley and dill)
- 1/4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth.
- Add breadcrumbs, herbs, red onion, garlic, lemon juice, lemon zest, cumin, salt, and pepper. Mix until well combined.
- Form the mixture into patties, about 1/2 inch thick.
- Heat olive oil in a large skillet over medium heat.
- Cook the patties for 4-5 minutes on each side, or until golden brown and crispy.
- Serve the burgers on buns with your choice of toppings.

- For a gluten-free option, use gluten-free breadcrumbs.
