Greek Chickpea Burgers are a crispy and satisfying plant-based delight, perfect for those seeking a flavorful and healthy alternative to traditional burgers.


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh herbs (such as parsley and dill)
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth.
  2. Add breadcrumbs, herbs, red onion, garlic, lemon juice, lemon zest, cumin, salt, and pepper. Mix until well combined.
  3. Form the mixture into patties, about 1/2 inch thick.
  4. Heat olive oil in a large skillet over medium heat.
  5. Cook the patties for 4-5 minutes on each side, or until golden brown and crispy.
  6. Serve the burgers on buns with your choice of toppings.
