Instructions
- In a large bowl, whisk together the buckwheat flour, eggs, milk, melted butter, and salt until smooth.
- Let the batter rest for 30 minutes to allow the flour to absorb the liquid.
- Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
- Pour a ladleful of batter into the skillet, swirling to cover the bottom evenly.
- Cook for 1-2 minutes until the edges start to lift, then flip and cook for another minute.
- Remove the crepe from the skillet and keep warm. Repeat with the remaining batter.
- For the filling, sauté the chopped spinach in a little butter until wilted.
- Place a portion of spinach and grated cheese on one half of each crepe.
- Fold the crepe over the filling and serve warm.
