Ingredients

  • 2 zucchinis, sliced
  • 1 eggplant, diced
  • 3 tomatoes, chopped
  • 1 bell pepper, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  3. Add eggplant and bell pepper to the skillet, cook for 5 minutes.
  4. Stir in zucchini, tomatoes, thyme, salt, and pepper. Cook for another 5 minutes.
  5. Transfer the vegetable mixture to a baking dish.
  6. Bake in the preheated oven for 25-30 minutes, until vegetables are tender.
  7. Remove from oven and let it cool slightly before serving.
