Ingredients
- 2 zucchinis, sliced
- 1 eggplant, diced
- 3 tomatoes, chopped
- 1 bell pepper, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
- Add eggplant and bell pepper to the skillet, cook for 5 minutes.
- Stir in zucchini, tomatoes, thyme, salt, and pepper. Cook for another 5 minutes.
- Transfer the vegetable mixture to a baking dish.
- Bake in the preheated oven for 25-30 minutes, until vegetables are tender.
- Remove from oven and let it cool slightly before serving.
