Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 eggplant, diced
  • 2 zucchinis, sliced
  • 1 red bell pepper, chopped
  • 4 tomatoes, chopped
  • 1 tablespoon herbs de Provence
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sauté until the onion is translucent.
  3. Add the diced eggplant, sliced zucchinis, and chopped red bell pepper. Cook for about 5 minutes, stirring occasionally.
  4. Add the chopped tomatoes and herbs de Provence. Stir well to combine.
  5. Season with salt and pepper to taste.
  6. Reduce the heat to low, cover the pot, and let it simmer for about 30 minutes, stirring occasionally.
  7. Once the vegetables are tender, remove from heat and let it cool slightly.
  8. Garnish with fresh basil before serving.

  • For a richer flavor, let the stew sit for a few hours before serving.
