Description
A delightful and rustic French Provencal Vegetable Stew that brings garden-fresh flavors to your dinner table.
Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 eggplant, diced
- 2 zucchinis, sliced
- 1 red bell pepper, chopped
- 4 tomatoes, chopped
- 1 tablespoon herbs de Provence
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sauté until the onion is translucent.
- Add the diced eggplant, sliced zucchinis, and chopped red bell pepper. Cook for about 5 minutes, stirring occasionally.
- Add the chopped tomatoes and herbs de Provence. Stir well to combine.
- Season with salt and pepper to taste.
- Reduce the heat to low, cover the pot, and let it simmer for about 30 minutes, stirring occasionally.
- Once the vegetables are tender, remove from heat and let it cool slightly.
- Garnish with fresh basil before serving.
Notes
- For a richer flavor, let the stew sit for a few hours before serving.
- Can be served hot or at room temperature.
