Description
A vibrant and protein-rich French Niçoise Salad perfect for a light lunch.
Ingredients
- 200g fresh tuna steak
- 200g green beans, trimmed
- 4 small potatoes, boiled and quartered
- 2 hard-boiled eggs, quartered
- 100g cherry tomatoes, halved
- 50g black olives
- 1 small red onion, thinly sliced
- Mixed salad leaves
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
Instructions
- Season the tuna steak with salt and pepper, then sear in a hot pan for 2-3 minutes on each side until cooked to your liking. Set aside to rest.
- Blanch the green beans in boiling water for 2 minutes, then transfer to ice water to cool. Drain and set aside.
- In a large bowl, combine the potatoes, green beans, cherry tomatoes, olives, and red onion.
- In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper to make the dressing.
- Drizzle the dressing over the salad and toss gently to combine.
- Slice the tuna steak and arrange on top of the salad along with the hard-boiled eggs.
- Serve the salad on a bed of mixed salad leaves.
Notes
- For a more traditional flavor, use canned tuna instead of fresh tuna steak.
- Adjust the seasoning to taste.
