Description

A vibrant and protein-rich French Niçoise Salad perfect for a light lunch.


Ingredients

  • 200g fresh tuna steak
  • 200g green beans, trimmed
  • 4 small potatoes, boiled and quartered
  • 2 hard-boiled eggs, quartered
  • 100g cherry tomatoes, halved
  • 50g black olives
  • 1 small red onion, thinly sliced
  • Mixed salad leaves
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste


Instructions

  1. Season the tuna steak with salt and pepper, then sear in a hot pan for 2-3 minutes on each side until cooked to your liking. Set aside to rest.
  2. Blanch the green beans in boiling water for 2 minutes, then transfer to ice water to cool. Drain and set aside.
  3. In a large bowl, combine the potatoes, green beans, cherry tomatoes, olives, and red onion.
  4. In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper to make the dressing.
  5. Drizzle the dressing over the salad and toss gently to combine.
  6. Slice the tuna steak and arrange on top of the salad along with the hard-boiled eggs.
  7. Serve the salad on a bed of mixed salad leaves.

Notes

  • For a more traditional flavor, use canned tuna instead of fresh tuna steak.
