Description
French Herb Roasted Chicken is a tender and aromatic dish perfect for a Sunday roast, infused with the flavors of thyme and rosemary.
Ingredients
- 1 whole chicken (about 4 pounds)
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme leaves
- 1 tablespoon fresh rosemary leaves
- Salt and pepper to taste
- 1 lemon, quartered
- 4 cloves garlic, crushed
Instructions
- Preheat the oven to 375°F (190°C).
- Rinse the chicken inside and out and pat dry with paper towels.
- Rub the chicken with olive oil, then season generously with salt, pepper, thyme, and rosemary.
- Place the lemon quarters and crushed garlic inside the cavity of the chicken.
- Place the chicken in a roasting pan and roast in the preheated oven for about 1.5 hours, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10 minutes before carving and serving.
Notes
- For extra crispy skin, increase the oven temperature to 425°F (220°C) for the last 15 minutes of cooking.
- Serve with roasted vegetables for a complete meal.
