Ingredients
- 3 large leeks, white and light green parts only, sliced
- 2 medium potatoes, peeled and diced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the sliced leeks and cook until they are soft, about 5 minutes.
- Add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 20 minutes, or until the potatoes are tender.
- Remove the pot from heat and use an immersion blender to puree the soup until smooth.
- Stir in the heavy cream and thyme. Season with salt and pepper to taste.
- Return the pot to low heat and cook for an additional 5 minutes, stirring occasionally.
- Serve hot, garnished with chopped fresh parsley.
Notes
- For a lighter version, substitute heavy cream with half-and-half or milk.
