Ingredients

  • 1 cup lentils, rinsed and drained
  • 2 cups water
  • 1/4 cup fresh lemon juice
  • 1/4 cup olive oil
  • 1 tablespoon lemon zest
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh dill
  • Salt and pepper to taste
  • Optional: crumbled feta cheese for garnish


Instructions

  1. In a medium saucepan, combine lentils and water. Bring to a boil, then reduce heat and simmer until lentils are tender, about 20-25 minutes. Drain and let cool.
  2. In a large bowl, whisk together lemon juice, olive oil, lemon zest, salt, and pepper.
  3. Add the cooked lentils, parsley, mint, and dill to the bowl. Toss to combine.
  4. Adjust seasoning with additional salt and pepper if needed.
  5. Serve chilled or at room temperature, garnished with crumbled feta cheese if desired.
