Ingredients
- 1 cup lentils, rinsed and drained
- 2 cups water
- 1/4 cup fresh lemon juice
- 1/4 cup olive oil
- 1 tablespoon lemon zest
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh dill
- Salt and pepper to taste
- Optional: crumbled feta cheese for garnish
Instructions
- In a medium saucepan, combine lentils and water. Bring to a boil, then reduce heat and simmer until lentils are tender, about 20-25 minutes. Drain and let cool.
- In a large bowl, whisk together lemon juice, olive oil, lemon zest, salt, and pepper.
- Add the cooked lentils, parsley, mint, and dill to the bowl. Toss to combine.
- Adjust seasoning with additional salt and pepper if needed.
- Serve chilled or at room temperature, garnished with crumbled feta cheese if desired.
