- 2 cups barley flour
- 4 cups water
- 1/2 cup spiced butter (niter kibbeh)
- Salt to taste
Instructions
- In a large pot, bring the water to a boil.
- Gradually add the barley flour to the boiling water, stirring continuously to prevent lumps.
- Reduce the heat to low and continue stirring until the mixture thickens to a porridge-like consistency.
- Add salt to taste and mix well.
- Remove from heat and transfer the genfo to a serving bowl.
- Make a well in the center of the genfo and pour the spiced butter into the well.
- Serve hot, allowing each person to mix the butter into their portion of genfo.
Notes
- Genfo is traditionally eaten with hands, using the fingers to mix the butter into the porridge.
