A simple and quick recipe for delicious ground beef enchiladas, perfect for busy weeknights.
Ingredients
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup enchilada sauce
- 8 flour tortillas
- 2 cups shredded cheese
- 1/2 cup chopped onions
- 1/4 cup chopped cilantro
- 1 can black beans, drained
- 1/2 cup sour cream
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add taco seasoning and a little water to the beef, stir well, and let it simmer for a few minutes.
- Mix in the black beans and half of the enchilada sauce, then remove from heat.
- Spread a small amount of enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with the beef mixture, some cheese, and onions, then roll them up and place in the dish seam-side down.
- Pour the remaining enchilada sauce over the tortillas and sprinkle with the remaining cheese.
- Bake in the preheated oven for 20 minutes or until the cheese is melted and bubbly.
- Garnish with chopped cilantro and serve with sour cream.
Notes
- You can substitute ground turkey for a leaner option.
- Adjust the level of spiciness by choosing mild or hot enchilada sauce.
