A simple and quick recipe for delicious ground beef enchiladas, perfect for busy weeknights.


Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheese
  • 1/2 cup chopped onions
  • 1/4 cup chopped cilantro
  • 1 can black beans, drained
  • 1/2 cup sour cream


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add taco seasoning and a little water to the beef, stir well, and let it simmer for a few minutes.
  4. Mix in the black beans and half of the enchilada sauce, then remove from heat.
  5. Spread a small amount of enchilada sauce on the bottom of a baking dish.
  6. Fill each tortilla with the beef mixture, some cheese, and onions, then roll them up and place in the dish seam-side down.
  7. Pour the remaining enchilada sauce over the tortillas and sprinkle with the remaining cheese.
  8. Bake in the preheated oven for 20 minutes or until the cheese is melted and bubbly.
  9. Garnish with chopped cilantro and serve with sour cream.

Notes

  • You can substitute ground turkey for a leaner option.
