Ingredients

  • 1 kg lamb
  • 500 g potatoes
  • 2 carrots
  • 1 onion
  • 3 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon rosemary
  • 1 teaspoon thyme


Instructions

  1. Preheat the oven to 200°C (392°F).
  2. Cut the lamb into large chunks and season with salt, pepper, rosemary, and thyme.
  3. Peel and slice the potatoes, carrots, and onion.
  4. In a large baking dish, layer the vegetables and place the lamb on top.
  5. Drizzle olive oil over the ingredients and add the garlic cloves.
  6. Cover the dish with a lid or aluminum foil.
  7. Bake in the preheated oven for 2 hours, or until the meat is tender.
  8. Remove the lid for the last 15 minutes to allow the meat to brown.
