Ingredients

  • 1 cup dried chickpeas, soaked overnight
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon baking soda
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil


Instructions

  1. Drain and rinse the soaked chickpeas.
  2. In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, salt, pepper, baking soda, and lemon juice. Pulse until the mixture is coarse but holds together.
  3. Form the mixture into small balls or patties.
  4. Preheat the air fryer to 375°F (190°C).
  5. Brush the falafel with olive oil and place them in the air fryer basket.
  6. Cook for 12-15 minutes, turning halfway through, until golden and crispy.
  7. Serve hot with your choice of sauce or in a pita with vegetables.
