Description

Creamy Tuscan Salmon is a rich and flavorful dish perfect for a quick and easy weeknight dinner. It combines tender salmon fillets with a creamy sauce infused with garlic, spinach, and cherry tomatoes.


Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season salmon fillets with salt, pepper, and Italian seasoning.
  2. Cook salmon fillets in the skillet for 4-5 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  4. Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer.
  5. Add Parmesan cheese and stir until the sauce thickens slightly.
  6. Stir in cherry tomatoes and spinach, cooking until the spinach wilts.
  7. Return the salmon fillets to the skillet, spooning the sauce over them. Cook for an additional 2-3 minutes to heat through.
  8. Serve immediately, garnished with additional Parmesan cheese if desired.

Notes

  • For a lighter version, substitute heavy cream with half-and-half.
  • Serve with pasta or rice for a complete meal.
