Creamy Tuscan Salmon is a rich and flavorful dish perfect for a quick and easy weeknight dinner. It combines tender salmon fillets with a creamy sauce infused with garlic, spinach, and cherry tomatoes.

- 4 salmon fillets
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season salmon fillets with salt, pepper, and Italian seasoning.
- Cook salmon fillets in the skillet for 4-5 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer.
- Add Parmesan cheese and stir until the sauce thickens slightly.
- Stir in cherry tomatoes and spinach, cooking until the spinach wilts.
- Return the salmon fillets to the skillet, spooning the sauce over them. Cook for an additional 2-3 minutes to heat through.
- Serve immediately, garnished with additional Parmesan cheese if desired.
Notes
- For a lighter version, substitute heavy cream with half-and-half.
- Serve with pasta or rice for a complete meal.
