Ingredients
- 2 cups pumpkin puree
- 1 can (14 oz) coconut milk
- 1 cup vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp ground nutmeg
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until soft.
- Add pumpkin puree, coconut milk, and vegetable broth to the pot. Stir to combine.
- Season with nutmeg, salt, and pepper. Bring to a simmer and cook for 15 minutes.
- Use an immersion blender to blend the soup until smooth and creamy.
- Adjust seasoning if necessary and serve hot.
