Ingredients
- 1 cup orzo pasta
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup spinach, chopped
- 1/2 cup grated parmesan cheese
- 1 tablespoon lemon zest
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
Instructions
- In a large skillet, melt the butter over medium heat.
- Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the orzo to the skillet and stir to coat it in the butter and garlic.
- Pour in the broth and bring to a simmer. Cook, stirring occasionally, until the orzo is tender and the liquid is mostly absorbed, about 10 minutes.
- Stir in the chopped spinach and cook until wilted.
- Remove from heat and stir in the parmesan cheese and lemon zest.
- Season with salt and pepper to taste before serving.
