Ingredients

  • 1 cup chickpeas, soaked overnight
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 2 carrots, sliced
  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 cup vegetable broth
  • 1/2 cup dried apricots, chopped
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. Drain and rinse the soaked chickpeas.
  2. In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
  3. Add the cinnamon, cumin, coriander, ginger, turmeric, and cayenne pepper. Stir for about 1 minute until fragrant.
  4. Add the carrots, zucchini, and red bell pepper to the pot. Cook for 5 minutes, stirring occasionally.
  5. Add the chickpeas, vegetable broth, and apricots. Bring to a boil, then reduce heat to low and cover. Simmer for 30-40 minutes, or until the vegetables and chickpeas are tender.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh cilantro before serving.

Notes

  • For a richer flavor, let the tagine sit for a few hours before serving.
  • Serve with couscous or flatbread for a complete meal.
