Ingredients

  • 500g boneless chicken thighs
  • 2 tablespoons olive oil
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1/2 cup garlic sauce
  • 1/2 cup pickles, sliced
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish


Instructions

  1. In a large bowl, combine olive oil, cumin, coriander, turmeric, paprika, cinnamon, salt, and pepper. Add chicken thighs and coat well. Marinate for at least 1 hour.
  2. Preheat a grill or skillet over medium-high heat. Cook the marinated chicken for 6-7 minutes on each side until fully cooked.
  3. Remove the chicken from heat and let it rest for a few minutes before slicing.
  4. In serving bowls, layer cooked rice, sliced chicken, garlic sauce, and pickles.
  5. Drizzle with lemon juice and garnish with fresh parsley before serving.
