Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cups cooked rice
  • Optional toppings: sour cream, guacamole, salsa


Instructions

  1. In a small bowl, mix together the chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper.
  2. Rub the spice mixture over the chicken breasts.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add the chicken breasts and cook for 6-7 minutes on each side, or until fully cooked.
  5. Remove the chicken from the skillet and let it rest for a few minutes before slicing.
  6. In the same skillet, add the sliced peppers and onions. Cook until they are tender and slightly charred.
  7. To assemble the bowls, place a portion of cooked rice at the bottom of each bowl.
  8. Top with sliced chicken, cooked peppers, and onions.
  9. Add any optional toppings as desired.
