- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cups cooked rice
- Optional toppings: sour cream, guacamole, salsa
Instructions
- In a small bowl, mix together the chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper.
- Rub the spice mixture over the chicken breasts.
- Heat olive oil in a large skillet over medium heat.
- Add the chicken breasts and cook for 6-7 minutes on each side, or until fully cooked.
- Remove the chicken from the skillet and let it rest for a few minutes before slicing.
- In the same skillet, add the sliced peppers and onions. Cook until they are tender and slightly charred.
- To assemble the bowls, place a portion of cooked rice at the bottom of each bowl.
- Top with sliced chicken, cooked peppers, and onions.
- Add any optional toppings as desired.
Notes
- For extra flavor, marinate the chicken in the spice mixture for 30 minutes before cooking.
- Use brown rice or quinoa for a healthier option.
