Cherry Coke Ice Cream (No-Churn) is the frozen flashback you didn’t know you needed! With creamy vanilla, flat Coca-Cola, and juicy maraschino cherries swirled together, this summer-ready treat is bold, nostalgic, and super easy to make—no ice cream maker needed! It’s rich, smooth, and bursting with that fizzy-sweet cherry cola flavor. Perfect for BBQs, birthday parties, or just a hot day when you’re craving something fun.


Ingredients

2 cups heavy cream (cold)

1 cup whole milk

¾ cup sweetened condensed milk

½ cup Coca-Cola (flat, room temperature)

½ tsp vanilla extract

¾ cup maraschino cherries, chopped

¼ cup maraschino cherry juice (from the jar)


Instructions

Flatten the Coke:
Pour the Coca-Cola into a glass and let it sit at room temperature for 30–60 minutes until it’s completely flat.

Whip the Cream:
In a large mixing bowl, whip the cold heavy cream until stiff peaks form (about 3–4 minutes on high speed).

Mix the Base:
In a separate bowl, whisk together the sweetened condensed milk, whole milk, vanilla extract, cherry juice, and flat Coke until smooth.

Fold Together:
Gently fold the whipped cream into the milk mixture with a spatula, being careful not to deflate the mixture. It should be light and fluffy.

Add Cherries:
Stir in the chopped maraschino cherries until evenly distributed.

Freeze:
Pour the mixture into a loaf pan or freezer-safe container. Cover and freeze for at least 6 hours or overnight until firm.

Notes

Letting the soda go flat is key—bubbly Coke can make the ice cream icy instead of creamy.

For extra cherry swirls, drizzle a bit more cherry juice on top before freezing and use a knife to create ribbons.

Want a deeper cherry flavor? Swap in Luxardo cherries or add a splash of cherry extract.

Ice cream keeps well for up to 2 weeks in the freezer if stored in an airtight container.

For best scooping, let it sit at room temp for 5–10 minutes before serving.
