Ingredients

  • 1 pound ground beef
  • 1 cup uncooked rice
  • 2 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add the chopped onion and bell pepper to the skillet and cook until softened.
  4. Stir in the uncooked rice, beef broth, and cream of mushroom soup. Mix well.
  5. Season with salt and pepper to taste.
  6. Transfer the mixture to a greased casserole dish.
  7. Cover with foil and bake in the preheated oven for 30 minutes.
  8. Remove the foil, sprinkle the shredded cheddar cheese on top, and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  9. Let it cool for a few minutes before serving.
