Description

Ingredients

  • 4 ears of corn, husked
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste


Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush the corn with olive oil and place on the grill.
  3. Grill the corn for about 10 minutes, turning occasionally, until charred on all sides.
  4. Remove the corn from the grill and let it cool slightly.
  5. Cut the kernels off the cob and place them in a large bowl.
  6. Add the cherry tomatoes and basil to the bowl with the corn.
  7. Drizzle with olive oil and balsamic vinegar.
  8. Season with salt and pepper to taste.
  9. Toss everything together until well combined.
  10. Serve immediately or chill in the refrigerator before serving.
