Description
A delicious and smoky grilled veggie salad featuring charred corn and fresh tomatoes, perfect for a summer BBQ side dish.
Ingredients
- 4 ears of corn, husked
- 2 cups cherry tomatoes, halved
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Brush the corn with olive oil and place on the grill.
- Grill the corn for about 10 minutes, turning occasionally, until charred on all sides.
- Remove the corn from the grill and let it cool slightly.
- Cut the kernels off the cob and place them in a large bowl.
- Add the cherry tomatoes and basil to the bowl with the corn.
- Drizzle with olive oil and balsamic vinegar.
- Season with salt and pepper to taste.
- Toss everything together until well combined.
- Serve immediately or chill in the refrigerator before serving.
Notes
- For extra flavor, add a sprinkle of feta cheese or a squeeze of lime juice.
- This salad can be made ahead of time and stored in the refrigerator for up to 2 days.
