Description

Cauliflower Tikka Masala is a creamy and aromatic plant-based curry that combines the flavors of coconut milk and garam masala.


Ingredients

  • 1 medium cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) diced tomatoes
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. Preheat the oven to 400°F (200°C). Toss the cauliflower florets with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until golden and tender.
  2. In a large pan, heat the remaining olive oil over medium heat. Add the onion and sauté until translucent.
  3. Add the garlic and ginger, and cook for another minute until fragrant.
  4. Stir in the garam masala, cumin, coriander, and turmeric, and cook for 1-2 minutes to toast the spices.
  5. Add the coconut milk and diced tomatoes to the pan, stirring to combine. Bring to a simmer and let it cook for 10 minutes.
  6. Add the roasted cauliflower to the sauce and stir to coat. Simmer for another 5 minutes to allow the flavors to meld.
  7. Season with salt and pepper to taste. Garnish with fresh cilantro before serving.

Notes

  • For a spicier version, add a pinch of cayenne pepper.
  • Serve with rice or naan for a complete meal.
