- 500g rice noodles
- 300g fish fillets
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- 1 tablespoon turmeric
- 2 cups coconut milk
- 1 cup chicken broth
- 1 stalk lemongrass, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- Fresh herbs (mint, basil, cilantro)
- Bean sprouts
- Lime wedges
Instructions
- Cook the rice noodles according to package instructions and set aside.
- In a pot, combine fish fillets, fish sauce, sugar, turmeric, coconut milk, and chicken broth. Bring to a simmer.
- Add lemongrass, garlic, and ginger to the pot. Cook until the fish is tender and the flavors meld together.
- Remove the fish from the pot, flake it, and return it to the curry.
- Serve the curry over the rice noodles.
- Garnish with fresh herbs, bean sprouts, and lime wedges before serving.
Notes
- Adjust the level of spiciness by adding chili peppers to the curry.
- For a vegetarian version, substitute fish with tofu.
