Ingredients

  • 500g rice noodles
  • 300g fish fillets
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 1 tablespoon turmeric
  • 2 cups coconut milk
  • 1 cup chicken broth
  • 1 stalk lemongrass, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • Fresh herbs (mint, basil, cilantro)
  • Bean sprouts
  • Lime wedges


Instructions

  1. Cook the rice noodles according to package instructions and set aside.
  2. In a pot, combine fish fillets, fish sauce, sugar, turmeric, coconut milk, and chicken broth. Bring to a simmer.
  3. Add lemongrass, garlic, and ginger to the pot. Cook until the fish is tender and the flavors meld together.
  4. Remove the fish from the pot, flake it, and return it to the curry.
  5. Serve the curry over the rice noodles.
  6. Garnish with fresh herbs, bean sprouts, and lime wedges before serving.

Notes

  • Adjust the level of spiciness by adding chili peppers to the curry.
  • For a vegetarian version, substitute fish with tofu.
