- 1 pound shrimp, peeled and deveined
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- 1 cup bell peppers, diced
- 3 cloves garlic, minced
- 1 cup rice
- 2 cups chicken broth
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Season the shrimp with Cajun seasoning and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add bell peppers and garlic, sauté until softened.
- Add the rice and stir to coat with the oil and vegetables.
- Pour in the chicken broth, bring to a boil, then reduce heat to low and cover.
- Simmer for about 15 minutes or until the rice is cooked.
- Add the seasoned shrimp to the skillet, cover, and cook for an additional 5 minutes or until the shrimp are pink and cooked through.
- Season with salt and pepper to taste.
- Garnish with chopped parsley before serving.
