Ingredients

  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 cup bell peppers, diced
  • 3 cloves garlic, minced
  • 1 cup rice
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Chopped parsley for garnish


Instructions

  1. Season the shrimp with Cajun seasoning and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add bell peppers and garlic, sauté until softened.
  4. Add the rice and stir to coat with the oil and vegetables.
  5. Pour in the chicken broth, bring to a boil, then reduce heat to low and cover.
  6. Simmer for about 15 minutes or until the rice is cooked.
  7. Add the seasoned shrimp to the skillet, cover, and cook for an additional 5 minutes or until the shrimp are pink and cooked through.
  8. Season with salt and pepper to taste.
  9. Garnish with chopped parsley before serving.
