Description

Ingredients

  • 10 egg yolks
  • 1 cup granulated sugar
  • 1 cup shredded coconut
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • Butter and sugar for greasing the pan


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin with butter and sprinkle with sugar to coat the sides and bottom.
  2. In a large bowl, whisk the egg yolks until smooth.
  3. Add the sugar, shredded coconut, melted butter, and vanilla extract to the egg yolks. Mix until well combined.
  4. Pour the mixture into the prepared muffin tin, filling each cup about 3/4 full.
  5. Place the muffin tin in a larger baking dish and fill the dish with hot water until it reaches halfway up the sides of the muffin tin.
  6. Bake in the preheated oven for 30-35 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let cool completely before inverting onto a serving plate.
