Description
Quindim is a traditional Brazilian dessert made with egg yolks, sugar, and coconut, resulting in a sweet, glossy treat with a rich, custard-like texture.
Ingredients
- 10 egg yolks
- 1 cup granulated sugar
- 1 cup shredded coconut
- 2 tablespoons butter, melted
- 1 teaspoon vanilla extract
- Butter and sugar for greasing the pan
Instructions
- Preheat the oven to 350°F (175°C). Grease a muffin tin with butter and sprinkle with sugar to coat the sides and bottom.
- In a large bowl, whisk the egg yolks until smooth.
- Add the sugar, shredded coconut, melted butter, and vanilla extract to the egg yolks. Mix until well combined.
- Pour the mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Place the muffin tin in a larger baking dish and fill the dish with hot water until it reaches halfway up the sides of the muffin tin.
- Bake in the preheated oven for 30-35 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool completely before inverting onto a serving plate.
Notes
- Ensure the egg yolks are well beaten to avoid a grainy texture.
- Quindim can be stored in the refrigerator for up to 3 days.
