- 2 cups rolled oats
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 2 cups almond milk
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 large egg
- 2 cups fresh or frozen blueberries
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- In a large bowl, mix together the oats, cinnamon, salt, and baking powder.
- In another bowl, whisk together the almond milk, honey or maple syrup, vanilla extract, and egg.
- Pour the wet ingredients into the dry ingredients and stir until combined.
- Gently fold in the blueberries and nuts, if using.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 35-40 minutes, or until the top is golden and the center is set.
- Allow to cool slightly before serving.
Notes
- You can substitute almond milk with any other milk of your choice.
- For a vegan option, replace the egg with a flax egg.
