Ingredients

  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 2 cups almond milk
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 cups fresh or frozen blueberries
  • 1/4 cup chopped nuts (optional)


Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a large bowl, mix together the oats, cinnamon, salt, and baking powder.
  3. In another bowl, whisk together the almond milk, honey or maple syrup, vanilla extract, and egg.
  4. Pour the wet ingredients into the dry ingredients and stir until combined.
  5. Gently fold in the blueberries and nuts, if using.
  6. Pour the mixture into the prepared baking dish and spread evenly.
  7. Bake for 35-40 minutes, or until the top is golden and the center is set.
  8. Allow to cool slightly before serving.

Notes

  • You can substitute almond milk with any other milk of your choice.
  • For a vegan option, replace the egg with a flax egg.
