Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 1/2 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 12 mini buns
  • Coleslaw (optional, for serving)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add chicken breasts and sear on both sides until golden brown.
  3. Transfer the chicken to a baking dish. In a bowl, mix BBQ sauce, chicken broth, smoked paprika, garlic powder, salt, and pepper. Pour the mixture over the chicken.
  4. Cover the dish with foil and bake for 25-30 minutes, or until the chicken is cooked through and tender.
  5. Remove the chicken from the oven and shred it using two forks.
  6. Mix the shredded chicken with the sauce in the baking dish.
  7. Serve the pulled chicken on mini buns, topped with coleslaw if desired.
