- 2 lbs boneless, skinless chicken breasts
- 1 cup BBQ sauce
- 1/2 cup chicken broth
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 12 mini buns
- Coleslaw (optional, for serving)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add chicken breasts and sear on both sides until golden brown.
- Transfer the chicken to a baking dish. In a bowl, mix BBQ sauce, chicken broth, smoked paprika, garlic powder, salt, and pepper. Pour the mixture over the chicken.
- Cover the dish with foil and bake for 25-30 minutes, or until the chicken is cooked through and tender.
- Remove the chicken from the oven and shred it using two forks.
- Mix the shredded chicken with the sauce in the baking dish.
- Serve the pulled chicken on mini buns, topped with coleslaw if desired.
Notes
