BBQ Jackfruit Sandwiches offer a delicious vegan alternative to traditional pulled pork, featuring a smoky sauce and crunchy slaw.
Ingredients
- 1 can of young green jackfruit in brine
- 1 cup of BBQ sauce
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 4 sandwich buns
- 1 cup coleslaw mix
- 1/4 cup vegan mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon maple syrup
Instructions
- Drain and rinse the jackfruit. Remove the core and shred the jackfruit pieces with a fork.
- In a pan, heat olive oil over medium heat. Add the jackfruit, smoked paprika, garlic powder, onion powder, salt, and pepper. Cook for 5-7 minutes.
- Add BBQ sauce to the pan and stir to coat the jackfruit. Simmer for 10-15 minutes until the jackfruit is tender and the sauce is thickened.
- In a bowl, mix coleslaw mix, vegan mayonnaise, apple cider vinegar, and maple syrup. Season with salt and pepper.
- Toast the sandwich buns if desired. Assemble the sandwiches by placing the BBQ jackfruit on the bottom bun, topping with slaw, and covering with the top bun.
- Serve immediately and enjoy your vegan BBQ delight!
Notes
- For a spicier kick, add a pinch of cayenne pepper to the jackfruit mixture.
- Leftover jackfruit can be stored in the refrigerator for up to 3 days.
