BBQ Jackfruit Sandwiches offer a delicious vegan alternative to traditional pulled pork, featuring a smoky sauce and crunchy slaw.


Ingredients

  • 1 can of young green jackfruit in brine
  • 1 cup of BBQ sauce
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 4 sandwich buns
  • 1 cup coleslaw mix
  • 1/4 cup vegan mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon maple syrup


Instructions

  1. Drain and rinse the jackfruit. Remove the core and shred the jackfruit pieces with a fork.
  2. In a pan, heat olive oil over medium heat. Add the jackfruit, smoked paprika, garlic powder, onion powder, salt, and pepper. Cook for 5-7 minutes.
  3. Add BBQ sauce to the pan and stir to coat the jackfruit. Simmer for 10-15 minutes until the jackfruit is tender and the sauce is thickened.
  4. In a bowl, mix coleslaw mix, vegan mayonnaise, apple cider vinegar, and maple syrup. Season with salt and pepper.
  5. Toast the sandwich buns if desired. Assemble the sandwiches by placing the BBQ jackfruit on the bottom bun, topping with slaw, and covering with the top bun.
  6. Serve immediately and enjoy your vegan BBQ delight!

  • For a spicier kick, add a pinch of cayenne pepper to the jackfruit mixture.
