- 2 cups carrots, sliced
- 2 cups zucchini, sliced
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine balsamic vinegar, olive oil, honey, salt, and pepper.
- Add the sliced carrots and zucchini to the bowl and toss to coat evenly.
- Spread the vegetables in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and caramelized.
- Remove from the oven and serve warm.
Notes
- Feel free to add other vegetables like bell peppers or onions for variety.
- Adjust the amount of honey for more or less sweetness.
