Ingredients

  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine balsamic vinegar, olive oil, honey, salt, and pepper.
  3. Add the sliced carrots and zucchini to the bowl and toss to coat evenly.
  4. Spread the vegetables in a single layer on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and caramelized.
  6. Remove from the oven and serve warm.
