Ingredients

  • 2 medium zucchinis, sliced into rounds
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon dried Italian herbs


Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine olive oil, minced garlic, salt, pepper, and Italian herbs.
  3. Add the zucchini slices to the bowl and toss until they are well coated with the oil and seasoning mixture.
  4. In a separate bowl, mix together the Parmesan cheese and breadcrumbs.
  5. Dip each zucchini slice into the Parmesan and breadcrumb mixture, pressing lightly to ensure the coating sticks.
  6. Place the coated zucchini slices in a single layer on the prepared baking sheet.
