Ingredients
- 2 medium zucchinis, sliced into rounds
- 2 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon dried Italian herbs
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine olive oil, minced garlic, salt, pepper, and Italian herbs.
- Add the zucchini slices to the bowl and toss until they are well coated with the oil and seasoning mixture.
- In a separate bowl, mix together the Parmesan cheese and breadcrumbs.
- Dip each zucchini slice into the Parmesan and breadcrumb mixture, pressing lightly to ensure the coating sticks.
- Place the coated zucchini slices in a single layer on the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes, or until the zucchini is golden brown and crispy.
- Remove from the oven and let cool slightly before serving.
Notes
- For extra crispiness, broil the zucchini for an additional 2-3 minutes after baking.
- Serve with a side of marinara sauce for dipping.
