Ingredients
- 1 large eggplant
- 1 cup breadcrumbs
- 1/2 cup grated parmesan cheese
- 1 teaspoon dried herbs (such as oregano or thyme)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs
- Olive oil spray
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Cut the eggplant into fry-like strips.
- In a bowl, mix breadcrumbs, parmesan cheese, dried herbs, salt, and pepper.
- In another bowl, beat the eggs.
- Dip each eggplant strip into the beaten eggs, then coat with the breadcrumb mixture.
- Place the coated eggplant strips on the prepared baking sheet.
- Lightly spray the eggplant fries with olive oil.
- Bake for 20-25 minutes, turning halfway through, until golden and crispy.
- Serve immediately with your favorite dipping sauce.
Notes
- For extra crispiness, use panko breadcrumbs.
