Ingredients

  • 1 large eggplant
  • 1 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon dried herbs (such as oregano or thyme)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs
  • Olive oil spray


Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut the eggplant into fry-like strips.
  3. In a bowl, mix breadcrumbs, parmesan cheese, dried herbs, salt, and pepper.
  4. In another bowl, beat the eggs.
  5. Dip each eggplant strip into the beaten eggs, then coat with the breadcrumb mixture.
  6. Place the coated eggplant strips on the prepared baking sheet.
  7. Lightly spray the eggplant fries with olive oil.
  8. Bake for 20-25 minutes, turning halfway through, until golden and crispy.
  9. Serve immediately with your favorite dipping sauce.
