- 1 1/2 cups whole wheat flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon

- 1/2 cup unsweetened applesauce
- 1/4 cup vegetable oil
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1 large egg
- 1 cup diced apples
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the whole wheat flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, mix the applesauce, vegetable oil, milk, vanilla extract, and egg until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the diced apples.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- These muffins can be stored in an airtight container for up to 3 days.
- For a sweeter muffin, sprinkle a little sugar on top before baking.
