Apple Cinnamon Muffins are a moist, fluffy, and aromatic treat perfect for a fall breakfast.


Ingredients

  • 1 1/2 cups whole wheat flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup diced apples


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the whole wheat flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix the applesauce, vegetable oil, milk, vanilla extract, and egg until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the diced apples.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
